Okay, so, I tried something new. I’m eating vegan, now, so new stuff is bound to happen. I liked this recipe. It was inspired by Eco vegan Gal and my new cook book Vegan Junk Food. Here we go.
1 1/2 cups of soaked chickpea (<— the tuna)
2 tbsp of vegan mayo
3 sticks of celery
1 tbsp of lemon pepper
1/2 large lemon or 2 limes
1/2 tsp of garlic powder
Optional- dry dill and some onion.
Put the chickpeas in a food processor with the lemon and mayo. I added some celery, but you can put it in whole after it’s been processed, that’s what I did. Blend until it has a proper texture. In a bowl, mix the garlic powder, lemon pepper and cut celery pieces. If you decide to put dill and onion you would also add them after the processed product. If you are craving a little of something else, add what is needed. Do what ever you would normally do with regular tuna. Make a tuna melt, or just eat it with crackers! It’s pretty delicious!
